Season: All Year Round 

Courgette Bhajis

Ingredients :

1 teaspoon salt

250g courgettes, grated *

100g flour

1/2 teaspoon ginger paste

1/2 teaspoon hot garlic pickle – The Garlic Farm *

1/4 teaspoon crushed red chillies *

1/4 teaspoon paprika

1/2 teaspoon ground turmeric

1 teaspoon lemon juice

250ml Rapeseed oil – Pratt’s Foods *


Method :

Add salt to grated courgettes and mix thoroughly. Leave to stand for about 5 minutes.

Add all the other ingredients, except rapeseed oil, and mix to form a batter.

Heat rapeseed oil in a frying pan. Add the batter carefully, one tablespoon at a time.

Fry over medium heat until golden brown, turning once.


To Serve :

Serve with chopped tomato, onion and cucumber and Caramelised Onion Chutney – Perfect Pickles *
