Ingredients
*3 tablespoons Unsalted Butter
*1/4 cup Rapeseed Oil
2 medium Yellow Onions, thinly sliced
1 teaspoon Salt
1 teaspoon Fresh-Ground Pepper
*2 Apples, each cored and sliced into 8 wedges
2 tablespoons Coriander Seed, crushed
1 teaspoon Ground Cumin
2 tablespoons Dijon Mustard
*2 tablespoons Honey
*4 (6- to 8-ounce) Boneless Pork Chops
Method
- Melt 1 tablespoon butter and 2 tablespoons oil in a large skillet on med-low heat. Add the onions and cook, continue cooking until onions are browned. Stir in 1/2 teaspoon of salt and 1/4 teaspoon pepper. Set aside.
- Melt the remaining butter in a large skillet on med-high heat. Add the apples and cook until lightly browned on one side. Turn the wedges over and repeat Remove from heat and keep warm.
- Preheat oven to 400 F. Combine the coriander, cumin, mustard, honey, and remaining salt and pepper in a small bowl. Heat the remaining oil in a large ovenproof skillet over med-high heat. Spread the spice mixture over the pork chops and place them in the hot pan. Sear pork chops for 2 min on each side and transfer to oven. Cook in the oven until done (5-7min). Serve with Sautéed Apples and Onions.
