Coriander-Crusted Pork Chops with Sautéed Apples and Caramelized Onions


*3 tablespoons Unsalted Butter

*1/4 cup Rapeseed Oil

2 medium Yellow Onions, thinly sliced

1 teaspoon Salt

1 teaspoon Fresh-Ground Pepper

*2 Apples, each cored and sliced into 8 wedges

2 tablespoons Coriander Seed, crushed

1 teaspoon Ground Cumin

2 tablespoons Dijon Mustard

*2 tablespoons Honey

*4 (6- to 8-ounce) Boneless Pork Chops


  1. Melt 1 tablespoon butter and 2 tablespoons oil in a large skillet on med-low heat. Add the onions and cook, continue cooking until onions are browned. Stir in 1/2 teaspoon of salt and 1/4 teaspoon pepper. Set aside.
  2. Melt the remaining butter in a large skillet on med-high heat. Add the apples and cook until lightly browned on one side. Turn the wedges over and repeat Remove from heat and keep warm.
  3. Preheat oven to 400 F. Combine the coriander, cumin, mustard, honey, and remaining salt and pepper in a small bowl. Heat the remaining oil in a large ovenproof skillet over med-high heat. Spread the spice mixture over the pork chops and place them in the hot pan. Sear pork chops for 2 min on each side and transfer to oven. Cook in the oven until done (5-7min). Serve with Sautéed Apples and Onions.
