Ingredients :
675g minced beef *
2 medium onions, finely chopped *
Seasoning of coarse sea salt, ground black pepper and coriander to taste
4 tablespoons caramalised onion chutney – Perfect Pickles *
2 teaspoons rapeseed oil *
200g blue cheese, sliced *
4 burger rolls, halved – The Flour Stall or The Hoxton Bakehouse *
Method :
Preheat the barbecue to medium-high heat.
Place the mince in a large bowl and add the seasoning. Add the finely chopped onion and 2 tablespoons caramalised onion chutney and mix together.
Divide the mince into 4 portions and gently form into 4 burgers, each about 2cm thick. Lightly coat each burger with rapeseed oil.
Place the burgers on your BBQ’s grate. Cover the barbecue and sear the first side for approx. 3 minutes. Flip the burgers, cover and cook for another 3 to 5 minutes or to your preferred taste. In the last minute of cooking, add a slab of blue cheese to the top of each burger and allow to melt.
Remove the burgers from the BBQ and place on the bottom half of the roll. Add a spoon of onion chutney and serve immediately! Serve with a mixed salad.
