All our pigs are born and reared outside in spacious paddocks which allow them to behave naturally and to grow in conditions which provide fresh air, natural daylight, exercise and of course the minimum of stress. Our aim is to produce a quality pork carcase of 50–60 kg dead weight providing small joints with modest amounts of fat. The ‘Hampshire’ breed provides well marbled and succulent pork with glycogen in the muscle providing sweetness and flavour.Our bacon pigs are taken a little heavier and only gilts (females) are used as we find they make the best quality bacon and ham.

Lyburn farm makes a variety of different hand made cheeses, all of which are made from our own cows milk. Although they are pressed, these artisan cheeses are not that close to cheddar cheese. They are, in general, a softer and amore continental type of cheese, with the exception of Old Winchester and Old Smales. Lyburn Cheese is a hard pressed cheese made with our own cows milk,on the Northern edge of the New Forest. The herd comprises 170 pedigree Holstien Friesians, run on 200acres, the remainder of the farm being down to organic vegetables.

Growing up in rural Northern Ireland, I didn't have a great deal of experience trying different types of cuisine until I turned 18, leaving my parents' home to work as an apprentice cook.  Things took off when I took a position as a Commis Chef at a small bistro in Dublin in the  Irish Republic. Here I was in control of the Pastry section and it sparked a complex fascination in all things sweet!

I have decided to settle in Whitchurch, East Hampshire and have taken the opportunity to develop my own range of handmade chocolates and confectionary. I draw inspiration for flavour combinations by liaising with local suppliers and artisan producers from Hampshire including dairy, licqueurs, fruit and honey and combine them with sugars and chocolate from around the world.
