From the Heart of Hampshire, Butler Country Estates makes delicious smoked trout pate, fillets an whole fish in the historic city of Winchester, in the heart of Hampshire.
Our smokery lies within a few minutes of the River Test, Itchen and Meon which are some of the finest nutrient-rich, chalk streams in the world.
We use rainbow trout raised in Hampshire’s gin-clear crystal waters for our smoked trout pate, whole fish and fillets. Being so close to our smokery ensures a freshness which is exquisitely reflected in the taste of our pates and fillets. FNK Pie House has been established since 2010 and has been selling at the Hampshire Farmers' Markets since then.
Our pies stand out from the rest as they are truly handmade, using stocks reduced from the bones and vegetables giving the pies a depth of flavour that our customers come back for again and again. As a Hampshire Farmers' Markets secondary producer we support the primary suppliers (farmers) by buying local meat and vegetables. Our pies are sold in eco-friendly packaging that can be completely recycled.
Our philosophy has always been that we don’t use preservatives, additives or flavourings and because so many people suffer from allergies they are also diary free and nut free. Our Vegan pies are soya, nut and most importantly Palm Oil Free.
Come and find, either Neal (Fraser Neal – the chef) or Hazel (the bottle washer), at the markets and we will talk you through our many flavours of savoury pies or you place an order by emailing us.More Information
Lyburn Farm, Landford, Salisbury, Wiltshire SP5 2DN
Lyburn Farm makes a variety of different hand made cheeses, all of which are made from our own cows milk. Although they are pressed, these artisan cheeses are not that close to cheddar cheese. They are, in general, a softer and amore continental type of cheese, with the exception of Old Winchester and Old Smales.
Lyburn Cheese is a hard pressed cheese made with our own cows milk, on the northern edge of the New Forest. The herd comprises 170 pedigree Holstien Friesians, run on 200 acres, the remainder of the farm being down to organic vegetables.More Information

Vlad and Tania are originally from Bulgaria and came over here in 2008. They have been working at Hampshire Farmers' Markets since 2009, but under the banner of Secretts farm shop in Godalming. However, after nearly ten years of being Secretts’ main growers, they were approached by a farmer who offered them some land near Selbourne, and the rest, as they say, is history.
Initially they started off with asparagus, raspberries, strawberries, blueberries, red currants, as well as various brassicas, such as purple sprouting broccoli, but soon found that they needed more land. Luckily for them, their old bosses, Secretts, had some land for sale with the added bonus of a huge glass house. This was a game changer for Vlad and Tania and enabled them to overcome their struggle with growing crops outside in the winter as now this fantastic new addition could house all of their spring vegetables, such as the radishes, spring onions, chard, cavolo nero and carrots.More Information
