The Ultimate Sausage Sandwich


8 medium or 4 jumbo, good quality sausages
2 large onions, thinly sliced
1½ tablespoons light muscovado sugar
1 tablespoon sherry vinegar
4-6 tablespoons tomato and chilli chutney
8 slices multi-seeded wholemeal bread
4 large vine tomatoes, sliced
50g watercress


  1. Place the sausages on a greased baking tray and cook at 190oC for 20-25 minutes, turning once or twice during cooking. Slice in half lengthways when cooked.
  2. Meanwhile, heat the oil in a large frying pan, add the onions and cook gently for 20 minutes until soft and brown.
  3. Add the sugar and vinegar and cook for another 5 minutes.
  4. Spread the chutney on 4 slices of bread, place sliced sausages on top then cover with onions, tomato and watercress. Finally, top with the remaining slices of bread and serve immediately.
