I large cucumber, diced *
Approx. 6 large fresh tomatoes *
1 small red onion *
2 tbspns rapeseed oil *
100g crumbled goat’s cheese *
Handful of Greek Olives
Salt, Pepper & Oregano to taste
Take advantage of the tomato season and use ripe and flavourful tomatoes! Cut the tomatoes into wedges, cutting over the bowl so you don’t lose any of the juices! Thinly slice the onion and add to the bowl. Liberally sprinkle salt, pepper and oregano and allow it to sit at room temperature for a minimum of 30 minutes.
Just before serving add the diced cucumber, goat’s cheese and olives (optional) and mix well.
Drizzle with rapeseed oil to taste.
Serve with a good crusty chunky bread! *
