1 medium cooking apple, peeled, cored, cooked and mashed
½ tsp cinnamon
100g plain flour
12 rashers bacon
Maple Syrup or Honey
Extra virgin rapeseed oil
Place the mashed apples in a large bowl and add the egg yolk, cinnamon and flour. Mix well. Add buttermilk, whisking to form a smooth paste. Beat the egg whites until stiff and then fold into the mix.
Heat a frying pan with a little oil. Add approx. 2 tablespoons of mixture, turning the pan and fry until risen and golden.
Grill the bacon.
To Serve :
Serve the grilled bacon on top of the pancakes, with a generous helping of honey or maple syrup.
