    Quick Kedgeree with Smoked Trout

    300g Cooked Rice

    3 eggs, hard boiled

    1 dessertspoon of Pratt’s rapeseed oil

    1 shallot, diced

    150g Smoked trout

    ½ lemon – juice only

    Small bunch of parsley, chopped.

    Cook rice according to the instructions on the packet. Shell the eggs and cut into quarters. Then heat the oil in a pan, add the shallot and cook gently until softened. Stir it into the rice and cook for 2 minutes. Then add the egg and parsley and stir carefully. Slice the trout and add to the pan. Finally squeeze over the lemon juice and serve. Delicious for either breakfast or supper!
